Combine pleasure and health with these amazing açaí cupcakes!
- 250g self-raising flour
- 1 tsp baking powder
- 1 pinch of salt
- 125g unsalted butter, room temperature
- 200g sugar
- 2 tsp lemon juice
- 3 eggs
- 100ml single cream
- 140g Nossa ! açaí berry pulp
Take the açaí pulp out of the freezer to unfreeze it.
Preheat oven to 180°C and butter the muffin tins.
In a first bowl sift flour, salt and baking powder.
In a second bowl mix butter and sugar until light and fluffy. Add lemon juice and mix again. Add eggs one at a time, beating well between each addition.
Stir in the first mixture to the second in three times. Add the açaí pulp.
Pour batter into prepared pans and bake for 20 minutes.
Let them cool before frosting according to your tastes!
