Farofa de Manioc (traditional Brazilian side dish)

Ingredients for 4 people :  

  • 8 tablespoons butter
  • 1 tablespoon oil of your choice
  • 1 large onion, finely chopped
  • 2 cups cassava flour
  • Salt, to taste
  • Freshly ground black pepper to season to taste

 Easy preparation of cassava farofa

  1. Melt the butter and palm oil in a frying pan over medium-low heat.
  2. Add the onions and cook for about 10 minutes, until soft and golden.
  3. Stir in the cassava flour and cook for 3 to 4 minutes, stirring, until the mixture is evenly toasted and slightly brown.
  4. Season with salt and pepper to taste.
  5. For a gourmet touch, add raisins and slivered almonds, and stir.
