Ingredients:
For the cream :
- 120g Les Nouveaux Affineurs 100% plant-based fromage frais
- 170g coconut cream
For the cookie base :
- 3 tablespoons firm coconut oil
- 120g Pleni Day gluten-free coconut cookies
For the acai coulis :
- 1 classic acai pod
- 2 teaspoons cornflour with a dash of water
- 1 tablespoon syrup
- 1 dash lemon juice
How the recipe works :
Preparing the cookie base :
Crush the cookies and mix with the melted coconut oil. Add a pinch of salt if desired. Divide the mixture between the bottoms of mini cheesecake molds and press down well.
Preparing the cream :
In a bowl, blend the fromage frais and coconut cream until smooth. Add the maple syrup, vanilla extract, coconut oil and lemon juice. Mix well.
