What are brigadeiro?

Brigadeiro are small Brazilian sweets made from sweetened condensed milk, butter and cocoa. Once cooked over a low heat until thickened, the dough is rolled into small balls and coated with chocolate vermicelli or shredded coconut. Easy to prepare, they have become a Brazilian dessert staple.

Over the years, different variations of brigadeiro have emerged, bringing new flavors and textures. Among the most popular are the traditional brigadeiro with chocolate and condensed milk, coated in cocoa or vermicelli. The white chocolate brigadeiro which uses milk powder and white chocolate instead of cocoa. The beijinhowhich means "little kiss", is a version made with condensed milk and coconut. Where do brigadeiro come from?

Brigadeiro appeared in the 1940s, at a time when chocolate was in short supply in Brazil due to wartime restrictions. To compensate for this shortage, Brazilian confectioners used sweetened condensed milk and cocoa powder to create a new confection. The name "brigadeiro" is said to come from Brigadier Eduardo Gomes, a military candidate for the Brazilian presidency in 1945. His supporters are said to have sold the sweets during election campaigns, helping to popularize them across the country.

Today, brigadeiro has become a symbol of Brazilian gastronomy, and is always present at major celebrations. They are prepared at home or sold in pastry shops.

Brigadeiro with acai

Traditionally made with cocoa, brigadeiro can be made with different ingredients to vary the flavours. The addition of acai adds a fruity touch that blends perfectly with the sweetness of condensed milk. This superfood from the Amazon is known for its rich antioxidant and essential nutrient content, making it an original alternative.

Pour the condensed milk and acai into a saucepan. You can add a tablespoon of butter, but this is optional. 

Heat the mixture over low heat, stirring constantly with a wooden spatula. The mixture will gradually thicken and pull away from the sides of the pan after about ten minutes. It should also be smooth. Once the dough is sufficiently firm, pour it into a lightly oiled dish and leave to chill in the fridge for about an hour.

Start by lightly oiling your hands with coconut oil, for example. Use a teaspoon to scoop out small portions and roll the brigadeiro between your hands to form small balls. You can then coat them in chocolate vermicelli, shredded coconut or almond powder. Acai brigadeiro can be eaten chilled and stored in the fridge for several days.
