When temperatures rise, coffee reinvents itself. An increasing number of establishments are adding cold, milder, more natural versions to their menus.
The acai cold brew is part of this dynamic.
This cold-brewed coffee, already much appreciated for its roundness and lack of bitterness, becomes an ideal base for sublimating Nossa acai purée!
Combine it with acai cream and you've got a modern summer drink that sets you apart.
How is cold brew made?
Cold brew differs from classic iced coffees in the way it is extracted. There's no hot water here, just a slow, cold brew.
Simply macerate ground coffee in filtered water at room temperature or in a cool place for 12 to 24 hours.
This gentle method extracts aromas gradually, without releasing the bitterness and acidity typical of hot-brewed coffee.
The result? A round, smooth, subtle and refreshing coffee.
Cold brew is also more stable once prepared: it can be kept for several days in a cool place, making it very practical for quick service in restaurants.
Making a good cold brew requires very little equipment or preparation. We recommend a ratio of 60g of ground coffee to 750 ml of filtered water, with a 16-hour infusion in a cool place.
What are the health benefits of cold coffee?
Beyond its taste, cold brew also appeals for its digestive and functional properties.
Because it's cold-brewed, it contains fewer acids than traditional coffee, making it gentler on the stomach. It's a good option for customers who are sensitive to acidity or wish to limit their consumption of full-bodied beverages.
It also offers a more gradual toning effect, with a relatively stable caffeine content, but released more slowly. It's the ideal ally for staying focused without the "stress hit" often associated with coffee.
The addition of Nossa! açaí puree, enriched with natural guarana, completes this stimulating effect while providing :
- a high antioxidant load (particularly anthocyanins, protective pigments),
- fiber and good lipids,
- a fruity flavour that naturally balances the taste of coffee.
The result: an ice-cold drink that's sweet, energizing and nutritionally interesting!
Acai cold brew recipe
Here's our version of cold brew with acai:
Ingredients (for 1 glass)
- 100 to 150 ml cold brew
- 1 100 g scoop Nossa! açaí-guarana (thawed)
- 2 to 3 tsp. heavy cream
- 2 teaspoons plant milk (or cow's milk)
- Ice cubes
Preparation
Start by preparing the cream by blending the açaí pod, heavy cream, milk and sugar until smooth. This preparation will serve as a cream to overcome the cold coffee.
Place ice cubes in a clear glass, then pour in the chilled cold brew.
Then add the acai cream on top, using a pouring glass. The aim is to keep the layers clearly visible, for a delicious visual effect.
