Ingredients:

  • About twenty prawns peeled
  • 50g ofacai thawed
  • 1 small shallot
  • A few sprigs of parsley
  • Juice of 1/2 lime juice
  • Salt and pepper to taste
  • 1 tablespoonolive oil
  • 1 lawyer

Preparation:

Prepare the shrimp:
  • Shell and coarsely chop the shrimps. Set aside in a salad bowl.
Add condiments:
  • Pour in the lime juice, olive oil, salt, pepper and acai. Mix well to coat the shrimp.
Prepare the avocado purée:
  • Mash the avocado with a fork to obtain a smooth purée. Finely chop the shallot and add to the avocado. Season with salt, pepper and a squeeze of lemon juice.
Arrange the plate:
  • Using a cookie cutter, start with a layer of avocado purée. Cover with the shrimp tartar.
